Es de destacar que la cocina típica o regional tanto en Argentina como en otros países tiene muchas variaciones en un mismo tipo de preparación, de provincia en provincia y de casa en casa adquiere características que la definen y diferencia. En la mayor parte de los casos se trata de preparaciones con un mestizaje producto del choque de las culturas aborígenes y europeas y mantiene los caracteres sugeridos por esas culturas. Algunas de las recetas incluidas provienen de edicones de principio de siglo XX y son recopilaciones de costumbres muy antiguas, otras son de cocineras de nuestros días que se basan en la tradición oral o escrita y algunas del siglo XIX y XX.
